Spicy Crab Salad Baguette Sandwich

Crab. It comes from the sea (obviously) and if you're not coastal it can be a pricey endeavor at times. With that said I still love it. It's one of the few foods I could eat on a daily basis. While we think of tuna salad, Bologna, or  Po'Boy sandwiches rarely do we think of a crab sandwich. I did though. I wanted
crab sandwich with a little bite, a lot of baguette and my favorite seasonal fall fruit. Here is a good fall picnic sandwich for these beautiful fall days we're having (at least here in the north) sitting under changing colored trees.

*Spicy Crab Salad Baguette Sandwich
Serves 4

6-8 oz White Crab Meat
1/2 medium Red Onion, diced
1/2-1 Jalapeno Pepper, seeded and finely diced
2-3 tbsp Horseradish 
1 Green Apple, sliced lengthwise
1 French Baguette
Salt and Pepper

In a bowl combine the Crab, Onion, Jalapeno, and Horseradish. Mix thoroughly. 

Slice open the Baguette lengthwise and add the Crab mixture. On top of the crab place the Apple slices. Add Salt and Pepper to Taste. Cut the baguette sandwich into four pieces and serve immediately.

-There are various varieties of green apples. However, many people are only familiar with the Granny Smith variety which are very tart. Do not use a tart green apple for this recipe. If you choose to, you do so at your own peril.
