Marinated Tofu with Bella Mushrooms on Mixed Greens



If you're an avid reader of this fine blog (if I do say so myself) than you know greens abound here at Casa Walczak since hubby's reading of Born to Run. The goal with any green based meal is to make it interesting. Dearies I'm board with the lack of intersection between hot & cold in rabbit faire, unless you're at the local Granite City & a chicken is thrown on top of it. In an effort to bring warm & chilly together and keep it relatively healthy
& vegetarian (although some nice Ahi Tuna or Grass Fed Steak strips would be pleasant too) I added some lightly fried marinated tofu & sauteed bellas to some colorful greens. Once again it was a meat eating Hubby hit.

The How To.....


In a large bowl add two packages cleaned, rinsed and dried mixed greens. Slice three carrots into rounds & add to your greens. Toss.


Slice 8 ounces of bella mushrooms (or any of your choosing really) & saute in butter until tender. When finished  put the mushrooms in container to retain their heat. Move quickly now!



Slice lengthwise some marinated tofu. Fry in olive oil on each side of the slices for about five minutes. Place a small amount of greens in the center of a plate.


Add the warm mushrooms around the outside & a few on  the greens. Place the strips of tofu onto of the greens in an interesting pattern. Done. Drizzle with dressing (I used a little orange ginger...which goes a long way). Eat!

Marinated Tofu with Bella Mushrooms on Mixed Greens

2 pre-packaged Mixed Greens
3 large Carrots, sliced into rounds
8 oz Bella Mushrooms, sliced
1 package Marinated Tofu (I used Italian Basil), sliced lengthwise
Butter
Olive Oil
Orange Ginger Dressing

In a large bowl add the mixed greens and carrots. Toss. 

Warm butter in a medium sized saute pan and saute the mushrooms on medium heat until tender. When finished  put the mushrooms in container to retain their heat. 

On a small frying pan, heat some olive oil and fry the tofu on each side for about 5 minutes. 

Place a small amount of greens in the center of a plate. Add the warm mushrooms around the outside & a few on  the greens. Place the strips of tofu onto of the greens in an interesting pattern. Drizzle with a little bit of dressing.
