Mozzarella Sage & Bella Mushrooms Panini on Sourdough.
Gather 8 ounces Bella mushrooms & slice lengthwise. Saute in butter in a frying pan until tender.
Gather enough sage to liberally supply all your sandwiches about .75 ounces (or one sage packet from the grocer).
Mozzarella Sage & Bella Mushroom Panini on Sourdough
makes 5 full sandwiches
1 small loaf Sourdough Bread, sliced
8 oz Bella Mushrooms, sliced
.75 ounces (about one package) Sage
8 oz Mozzarella, shredded
Prep a panini maker.
In a large saute pan, saute the mushrooms in butter until tender (about 5-10 minutes).
Coat with olive oil (using a pastry brush) the outside slices of your soon to be sandwich. Flip the slices over leaving the clean side face up. Add heaping amounts of sage, mushrooms and mozzarella on top of clean side of the bread. Place the clean side of the adjoining sandwich slice on top of the ingredients. Place the oiled side of the sandwiches in an already pre-prepped Panini maker.
Heat the sandwiches according to the Panini maker directions & until the cheese is melted sufficiently.
