Fried Eggs with Spinach & Brie on Toasted Baguette


I LOVE a filling breakfast. It makes my heart go pitter---patter. It's a striking contrast to the breakfasts I ate living in Madrid. Tea & what I still call mini mini muffins (of one flavor). I'd be starving by the time lunch & siesta came. But lunch was so large in Spain it would hold me (sometimes depending on what we had for lunch) until the traditional small dinner at around 10 p.m. But, alas that was eons ago, friends. I once again exhibit the traits of my culture (some bad, some good). The heartier the breakfast (hearty doesn't mean big...you thought you'd sneak that bye

                                            e) the less I eat all day long. This was me a Hubby's hearty Sunday morning eats this past weekend. He said it was restaurant worthy. As we all know a lady can take a compliment. So I thanked him graciously and heartily agreed!


Saute about 4.5 ounces of spinach in olive oil, until very tender. While the spinach is cooking add salt and 1 teaspoon of hot sauce & continue to saute. Place the finished spinach on a plate lined with paper towel. Add another paper towel on top of the spinach to retain its heat & to absorb the olive oil.


Cut 8 slices of a french baguette. Cut 8 slices of brie cheese to place on top of each baguette slice. Place the bread topped with brie cheese in the oven on about 325 degrees until the cheese is melted & the bread is more then slightly toasted.


When the bread is done toasting, place the heaping amounts of the spinach on each slice.


On a hot slightly oiled frying pan, fry four organic eggs soft, medium, or hard...your choice.  Add two of the fried eggs on top of four slices of the baguette topped with brie & spinach. Add salt and pepper to the eggs to your desired taste. Serve immediately.

serves 2

4 1/2 oz fresh Spinach
1 tbsp Olive Oil (and more for frying the eggs)
1 tsp Hot Sauce
8 slices of French Baguette
8 slices of Brie Cheese
4 organic Brown Eggs
Salt
Pepper

Preheat oven to 325 degrees.

Add one slice of brie cheese to one slice of baguette. Place the slices into the oven until the cheese is melted and bread is more than slightly toasted.

In a saute pan, add the olive oil and spinach. Saute the spinach on medium heat, adding the hot sauce and the desired amount of salt, until the spinach is very tender. Place the finished spinach on a plate lined with paper towel. Add another paper towel on top of the spinach to retain its heat & to absorb the olive oil.

If your bread is done toasting add heaping amounts of the spinach to the bread. 

On a hot slightly oiled frying pan, fry four organic eggs soft, medium, or hard...your choice. Add two of the fried eggs on top of four slices of the baguette topped with brie & spinach. Add salt and pepper to the eggs to your desired taste. Serve immediately.
