Chocolate Covered Oranges

I'm a girl from the North Friends. No matter how much I attempt to channel any family lineage. Suffice it to say, I have never known how Northern I am until I came down here to Florida & tasted local just picked off the vine citrus. Shipping cannot compare. Local is where it's at. Juice is already running down your fingers as you peel an orange here, let alone separate its pieces. What can be better than fresh oranges, its juices, & chocolate.
If you're from the North like me...wait until summer to get the best tasting chocolate oranges you can. If you're from the South, make this recipe today.

Chocolate Covered Oranges
serves 4

16 ounces Vegan Chocolate Chips
2 Oranges, ripe and of good quality, peeled and separated

Lay out copious amounts of wax paper.

In a double boiler on medium heat melt the chocolate chips. Once the chocolate is melted lower the heat to medium low (you never want the chocolate to come to a boil or get too cool).

One at a time, dip one side of a a piece of orange into the chocolate and coat. Then place the orange on wax paper. Continue this process until you've dipped all the orange pieces into the chocolate.

Place the wax paper with the dipped oranges on it in the refrigerator uncovered for about 30-45 minutes. Remove from the refrigerator. Eat. Savor. Enjoy!!!
