Dears, let me tell you the story about how this recipe was born. I was hungry. I was wondering around Whole Foods like a someone who came out of a coma in a new century. I had told myself that a pre-dinner snack of stuffed grape leaves needed at least a day's rest out of five consecutive devouring sessions (so don't be surprised if you see a stuffed grape leaf recipe here soon...I love them). So after playing around in my head with different ingredient options, all revolving around feta or goat cheese and some fruit or vegetable, I made this combination. Without the dressing it lacks the pizzaz that is so inherently ME. But with the added Honey Soy Balsamic Dressing the pizzaz makes its rightful return taking a good dish & making it great.

Spring Beans with Goat Cheese & Honey Soy Balsamic Dressing
Spring Beans with Goat Cheese
1 lbs fresh Green Beans, ends snapped off
6 oz Goat Cheese Crumbles
Honey Soy Balsamic Dressing
1 tbsp Balsamic Vinegar
1 tbsp Lite Soy Sauce
1/2 tsp Organic Honey
1 dash Salt
For the Spring Beans:
Blanch the green beans for five minutes. Drain and let sit at room temperature to cool for 15-20 minutes.
Add the green beans to a bowl & the goat cheese to taste. Mix in the dressing with the beans and goat cheese. Add salt to taste. Serve. Enjoy!!
For the Dressing:
In a small bowl add all the ingredients. Whisk well.
