Salmon "Fried" Rice with Cabbage and Jalapeno

Here at Casa Walczak we have been on an experiment of quick healthy weeknight meals. I planned our whole breakfast & dinner menu last Sunday for the week. Not wanting to be more creative then that, I went in search of quick easy meals. If you need some suggestions go to the Real Simple website. This has been our menu of choice this week. Above is one of our dinners. It's called "fried" rice. It's fried-kind of, but not like at your favorite local Asian food restaurant-which for us is good. It seems more healthy to me if it does not have that fired look {whether it's true or not}. What I have learned from experience, is if you are going to plan your menu for the week, don't try to do it all in one day. Organization is great! Giving yourself time for it, even better!

Salmon "Fried" Rice with Cabbage and Jalapeno
{inspired from Real Simple }

3/4 lbs Wild Salmon, cooked
3 1/2 cups Brown Rice, cooked
3 cups Frozen Green Beans
1 tbsp Canola Oil
1 tbsp Fresh Ginger, chopped
1 large Jalapeno, sliced
1 small Green Cabbage, sliced
1 1/2 cups Frozen Peas
3 tbsp Rice Wine Vinegar

Heat oil in a wok over medium-high heat. Add the rice, ginger, and jalapeno and cook stirring frequently, until the jalapeno is soft. Add the cabbage and stir frequently, until the cabbage is soft. Add the green beans and peas, stirring occasionally until warm.

Add the vinegar. Add salt to taste. Add the salmon. Mix thoroughly. Let the salmon warm, about 2-3 minutes. Serve with a side of cilantro {or more if you want}. Eat Up!
