Lemon Cakes




Our friend & neighbor had a birthday the other day. She & her husband invited us over for dinner to celebrate. I don't know about you, but I thought that was very generous. I spend most my birthdays trying to figure out who can take me out, to breakfast, lunch & dinner on the special day. Oh, don't act like you don't think that way either. In know you do. Therefore, in keeping with my world view of manners, I gladly prepared some baked goods to bring over to their home, to celebrate the birthday girl. I had approximately one hour & fifteen minutes to make something & get to their home. I'm telling you this, because this little lemony cupcake recipe is that quick & easy. Everything was prepared & we were out of the door on time.

Because the 4th is upon us, may I suggest the following modifications to this recipe. If you decide to indulge, add some festive holiday appropriate food coloring to the buttercream. Or stick in a sweet treat flag. Or better yet, those sparkler candles-then serve these in the evening outside to family & friends. Who needs fireworks with sparkler candles!



Lemon Cakes
from 1001 Cupcakes, cookies & other tempting treats

Cake Ingredients

3/4 cup heaping self-rising flour
1/2 tsp baking powder
8 tbsp butter, softened
1/2 cup heaping superfine sugar
2 eggs
finely grated rind of 1/2 an organic lemon
2 tbsp whole (or 2%) milk
confectioners'sugar for dusting (optional)

Lemon Buttercream Frosting

6 tbsp butter, softened
1 1/2 cups confectioners' sugar
1 tbsp organic lemon juice


Making the cupcakes

Preheat oven to 375 degrees.

Line a cupcake tin with paper liners.

Sift flour and baking powder into a large bowl, add butter, sugar, eggs, lemon and milk, and beat together until smooth. Spoon batter into the paper liners. Bake in the preheated oven for 15-20 minutes, or until risen and golden brown. Transfer to a wire rack to cool completely.

Making the frosting

Place butter in a bowl and beat until fluffy. Sift the confectioners' sugar, add the lemon juice, and beat together until smooth and creamy.

When the cupcakes are cold spread or pipe on the lemon buttercream frosting. Dust with confectioners' sugar if you like.
